Originally from Sydney (Australia), Richard ddiscovered the art of pastry-making with a traditional French pastry chef during his first job. After completing his apprenticeship, he obtained his visa for France with the dream of learning from the best. After a number of years in a variety of settings, Richard Hawke landed his dream job at Alain Ducasse and Yves Thuries‘ renowned school, the Ecole Nationale Supérieure de la Pâtisserie.

This experience enabled Richard to meet and work with the best in the profession. He enhanced his skills and continued to learn. After various experiences of living and working internationally, Richard is now based in France and has spent the last two years focusing on gaining a better understanding of new pastry techniques that will push the boundaries of what we know about pastry.

Richard Hawke defines his daily life in three words: research, travel and family. He now spends his time in his laboratory, where he continually develops and refines an ever-increasing variety of creations. In addition to research, he travels abroad for pastry masterclasses, which allow him to share his passion, passing on his know-how to enthusiastic students.
